Do you skip random encounters on fast travel?
I have 100% skipped them all.
But after 40~ hours I wonder if I shouldnt.
Are there any interesting encounters?

Moment ago had encounter where NPC was on his way to town where Henry acts as Bailiff.

Oh yes there are a quite few interesting and also funny ones. Won´t spoil anything but I´d recommend checking them out if you are in the mood for it.
There are interesting ones yes like being stopped by an inquisitor who's searching for a young warlock in armor riding a horse and accompagned by a dog in the Kuttenberg map. You can convince him that you're not the one he's searching for or slay him and his guards who have interesting equipment. I'm not even convinced that he's a real inquisitor, but it's kind of a funny encounter. I hear people saying that you can face even supernatural events. It's worth taking a look at least, but sometimes it's clear that it's just bandits and you can skip them if you don't want to fight them.

Depends. I know which ones are bandit ambush 400+ and which ones aren't now.

There's some spots where a specific encounter will always happen, like solo Cuman when you pass through a village.
Most of them are worthwhile.
yea, you can get some side quests/activities from them, never skip them
Imagine paying for the game, then skipping on content you payed for.......

I had that encounter but wasn't fast travelling. I think it's tied to taking the "Dark Arts Apprentice" perk under Alchemy. Pretty nice touch by the devs really.

I had another encounter where I was stopped by a young lass claiming I'm the one she was destined to marry, after dreaming about me. I turned her down. She gave a parting remark like "You can't be him anyway, in my dream he was taller...", so I told Mutt to sic her.
I only skip them if I'm hyper-fixated on a specific task. I have issues with being side-tracked and distracted, and sadly sometimes it even gets me in games.
Most of the times unless I've got a time sensitive quest to do or just really want to finish something. But it's really worth it, just recently got asked by a guy to punch him because he lost a letter and then he can just say that he was robbed.

Some are, some aren't, ran into a funny bloke who sold fake artifacts.
