Help stealing horses and fencing them?

How do i wait while making sure the horse i stole doesn't wander back to where i stole it?

My problem is that when i steal a horse= Night
When stolen horse can be sold = day
I don't want to wait irl until the dude wakes up to sell him the horse.

Tbh I do it in the day mainly, if the horse is already far away from the owner, he won't see it ngl
