you prob hit multiple deer, I shot a deer once with a crappy crossbow and tracked it through the woods for a while and it died from blood loss

Don't try until you are a bit proficient with arrows or bolt, train at every target range competition when you seen one, the stakes are low but dramatically increase your skills even if you lose.

or dip your missiles in Dollmaker potion. no body no game will run away.

If you're struggling look into getting some of the dollmaker poison, it stops what ever it hits from being able to run. Put some of that on your arrows and it'll change hunting for you instantly.

If you also get the highest tier of potion making you can also use bane poisons. As they also have the effect to stop running but also do 110 damage in 15 seconds. So it's a 100% chance to kill if you hit anything and it won't run off... or chase you.

I have 10 marksmanship and kill deer (stags) in one shot with a crappy crossbow I found (200 power). Bows take about 2 hits if you don't hit them in the chest ++ the perk that does +% damage when shot in the chest.

Not sure why people are using poison unless they are shooting them in the ass.

You can get a LOT better with your archery and do massive damage. Just keep practicing
