The rest you could have done at any pace of your choosing.
There's a random encounter possible a couple if I remember or maybe it was a mission where you encounter nobles who have been imprisoned or escaped and reference how they are treated fairly well.
I finished my first playthrough with skill levels around 20. It was hard. Well before I finished my second, I was at levels around 29 or 30, for strength, vitality, agility, speech, swordsmanship, heavy weapons, polearms, archery, horsemanship, thievery, scholarship, speech, survival. The only sub-20 skills were houndmaster (12) and drinking (12).
That made the end game much, much easier.
To boost your health stats, you need to walk around overburdened and participate in archery contests. To boost your combat skills, you need to train in Trosky castle (yep, you can go back to the castle you escaped from and if you don't encounter the captain of the guard (you need to actively seek him out) you can boost your weapon skills to your heart's content without anyone commenting on the fact that you're a wanted fugitive) or just outside the castle in the archery range. The rest sort of happen as you do side quests.
