enemies just need to be buffed. Currently they deal too little damage and aren't aggressive enough. Even without master strike it's pretty easy.
If skilled with any weapon or even unarmed, you need no masterstrike whatnot, just press forward and shove yourself into their face and they're gone.
Of course, use a good weapon, not some low damage rubbish.
One of the things I hated with KCD 1 combat was the fact that end game fighting was super defensive since all weapons could Masterstrike and it was essentially RNG. Especially against multiple opponents, it was very risky to attack and combat was all about circling and countering with Masterstrike. Very boring.
KCD 2 fixes that by ensuring you can always attack without fear of being Masterstriked in return by not attacking opposite a sword wielder. The trade off is that you now have the endless parry/riposte cycle if you don't know how to perfect dodge properly or feint.
I recommend using feints in combination with charged attacks (which have a lower RNG chance to block/parry/dodge for NPCs).
I still think swords are very powerful right now given that they can Masterstrike and it feels like armor doesn't protect nearly as well against swords as in the first game.
edit: Also I'd like to point out its even easier if you add poisons onto your swords and ammo lol
