Hunting Permit
I'm about 25hours in, barely touched the questline but have spent my days in the forests as a huntsman of sorts developing my crossbow skill and hunting with Mutt.

I've tried to do things as legitimate as possible, rarely stealing and just living the life out in the wild - I wondered if it was possible to have permission from the lord to hunt? Is there a side quest that unlocks this?

i finished my first playthrough a few days ago after 170 hours and doing almost all side quest (except of the miller ones).

i dont know if i have missed something though, it could be that some quests disappear when you progress the main sotry, i dont know, but i have not come across a way or a quest that gives you permission to hunt personally

That's a shame, I hope this is added later on along with fishing and house building/ownership!

Forests were usually owned by the king and all game inside was owned by him, hunting was very hard to do without the lieges approval back then
Kinda weird since Henry is an official huntsman. He became one in part 1.

A hunting permit is a great idea! It would cost a bit of money and you would need direct permission from someone close to the King.

Completely agree.

I wonder if something is planned later on?

Until then, you have to go for wolfes and small rabbits, because they don't count as stolen.

officially in the game no, but in the first one you had permission so you could say you have it and just cook all the food you get to remove the stolen status

He works as huntsman for Talmberg. That's not really the same thing. It's not really a global permit. I doubt most people or npc in kcd2 even knows Sir Divish.
