100%. Henry could even just knighted by Wenceslas. He's literally the greatest soldier who ever lived with a body count in the hundreds. Few men even in the modern age with firearms can compete. There were certainly instances of lowborn men who were elevated to become knights through exceptional military service. If that doesn't include Henry, I don't know what does.
Who from the imprisoned King?

The Hussite Wars begin in 1419, involving everyone from Czech hero Zizka to Capon to Sigismund, and are fought until 1434, although resistance to Sigismund's rule continued sporadically until his death.
My guess is that KCD3 could involve a new protagonist, and with the game seeming to favor Henry and Rosa, playing as their son seems quite reasonable, especially since both Rosa and Henry are invented characters for the story.
"That's gunna be a no from me dawg."
Henry would be getting older at that point, so while he might be fighting as a soldier it would be less... gung-ho about it than KCD1 and 2.
