Best way around this would be to move whole Mods folder out of your game, load up a saved game of choice, then once loaded in, make a new save. Which without Schnapps you can sleep & save at supporting Bed. Or use the Save & Quit option.
Now you have a new saved game file with NO MODS attached to it.
Now go and put the Mod folder back into game folder. Take note of the mods there, check for a new version of them. If they have not updated after latest game version, remove that mod for now.
Make use of the Mod that allows you to simply press F5 to QuickSave; which will come in very handy.
Once you have a couple working saved games, go to the saved game folder, sort by date modified so most recent is at time. Note the date & time of the saves. Delete many if not all the old ones you no longer need. Doing it this way is much quicker and easier then attempting to delete them 1 by 1 in-game.

Have you updated to latest version of the Unlimited Quick Save Mod?
Have you tried loading an older save file?
I just made sure my mods were up to date. My quick save (aka autosave files) reached well over 1000 without any issues which means I don't suffer from that bug. So some of you folks where it's stopped working are doing something wrong
And yes, although I deleted down to 2 saves attempting to fix the issues.
You set Steam and game EXE to Run As Admin?
Sounds odd for you to have this bug without using mods.
You verify the game files?
I didn't verify, I reinstalled on SSD, just incase. Makes a change to have a "requires SSD" to actually be faster on SSD, usually makes next to no diff for me.
