Historically there are poisons you could hunt with that didn't "flavour" the meat but none of them in this game are good for that.
Something you do when hunting larger game is use a specific arrowhead that leaves larger wounds and the game's thought of them as well they're called "wounding arrows", as long as you hit it centre mass you can chase after it and it won't run as fast and bleed out. Harsher for the animal but cleaner than resorting to poisons or damaging it too much with more powerful weapons
