Them saying that there will not be one and the final sales numbers of the game are 2 different things. That is why they left it so open ended. If this game hits 4 million copies+ why wouldn't they do a 3?

It would be rather interesting if part of exploring a monastery to stop a plague also involved killing Eric who is involved in some way. Would have a nice little aspect that reminds us of the first game monastery infiltration to get a killer.
It was never confirmed. Vavra confirmed only that the story of his revenge is over. The third game of the Kingdom Come franchise could still utilize Jindřich as the main protagonist. All possible main plot KCD2 endings allow Warhorse to involve Jindro in the events of (spoiler for those who don't know the real history of the period) both Racek's guerrilla against Rozhemberks and the Hussite wars.

Yes, Jindro needs to drag Jan down the aisle, von Bergau should be pacified, and Jindřich needs to be knighted if he wants to marry Roza. Hence at least two DLC's in 2026 are highly possible.
The third game of the franchise would definitely not have the subtitle "Deliverence". Bohemia is delivered from Sigismund, after all.
My guess is that Erik would be killed in Trotsky castle siege by Jindro, and our old pal would get his spurs finally in DLC, Jan would be married, and after that, we would wait the Kingdom Come 3 for 7-8 years - on a different engine and with different gameplay formula (EU5 and gameplay would be between KCD's and Mount and Blades).
Don't forget guerrilla against Rozhemberks which took place in Moravia until 1410, and all our old pals were involved - Racek, Zhizhka, Jan Sokol, and Dry Devil .
Me too, but the bad tone of the KCD2 story and extraordinary moralizing could cause another ending of the saga.
