You can also save by sleeping in the bed at the mill or an inn. It also saves when you pay for a happy ending bath. And there is save on exit. It also auto saves if you do not play on hardcore.
Also to add on the autosaves they said they have increased the frequency of autosaves significantly
Also also.. the remove saviour schnapps mod was one of the first things released on nexusmods back when kcd came out originally xD so if its really such a big issue then just use the very easy to install mod
100% true, which is why the arguments of "It is better", or "it'll prevent save scumming" is void. It was easy to get the means to do manual saving, so no difference if you have a menu entry for it, or an hot-key for it (except, of course; the fact it breaks gamebalance by making you stronger everytime you save, due to alcohol skill perks that you unlock quickly just by saving).
We're all making assumptions about so many things, and we don't even know how extensive the changes are, yet. These teasers and gameplay spotlights aren't meant to give us a complete picture.

You save manually by drinking a potion, which you have to prepare for buy either crafting or buying. Preparation is good, because it involves you directly in your delayed gratification.
An finally you can just quit the game, and it will auto save exactly where you left off until you return.
All of these systems are in place to enable you to save you progress, while also removing the crutch of quick save spamming present in so many other games.
You are free to install mods that let you quick save, which creates a lesser quality experience, but is absolutely available to you.
Maybe you should just embrace the game's system and see whether you might not enjoy playing the game that way. The beauty of role playing is that sometimes, failing is part of the experience, and by having no cost to saving your progress, you are also removing any cost to reversing your failures, and without failure, success has no value.
As I said, there's nothing wrong with installing a mod for this, if you really can't do without the feature.
