I think the best classes would be
1) Vanguard
2) Infiltrator
3) Sentinal
If i were to choose between the 2 you have mentioned it would be the Adept and i would take Shotgun as my bonus skill, with Ashley and Tali being my squad, I normally always play a Renegade Adept throughout the Trilogy
The Adepts have many offensive skills that make a playthrough very easy
As for ME1, though, I do agree that Soldier is the easiest way to win on hard difficulty; it's just boring and feels like you're powergaming for the sake of powergaming.
Infiltrator isn't weak and is always a respectable class.
Sentinel sucks at first but gets better and more interesting and useful as the trilogy goes on.
For ME1 you can try and go pure class, but on the later 2 having limited options kinda holds you back
In Mass Effect 1, Vanguard has a lot less bionic powress that Adept and no Biotic Charge, but does have something called ... Adrenaline Burst. Only the Soldier has it too, but a Vanguard IMO can make much much better use of it

Yeah i agree about the Sentinal, it's a weak class to start off but they become quite powerful as the game progresses, the only reason i rate them higher than the adept's is because they specialize in both Biotic/Tech but i would rate Adepts a better class in Mass Effect 3, there's no real need to shoot your weapon when you play as one when you can just spam warp and throw
Weapon skills are easy to unlock, anyone can do it so your first goal is unlocking the non-weapon abilites. Early on use weapons that aren't that great (sniper rifle) to get their unlocks then later in the game you'll have and use more useful weapons. I like to go sniper/shotgun/ and save pistol rifles for later in the game since those are much better.
Plus the game is really easy for any weapon really, so what weapon you use isn't very important (cept sniper sucks).
Just my suggestion, if you plan on playing through multiple times, maybe building a character or 2 for ME2, etc I would skip soldier all together and go through as another class, unlocking as many abilties as possible, then 2nd time play what ever you missed with 1st character.
I know I'm likely to only play the game once (too much of a backlog of other games), and its an issue I often have with other roleplaying games. So little time to play things multiple time. (I like largely classless games where you build your character up as you please)
I don't agree with that. I think Soldier's by far the easiest class to beat the highest difficulties in ME2 (which is the only way to judge "power" in a linear, single-player game).
Nor do I think Soldier's the best in ME1. Yeah Immunity's OP but Infiltrator has everything they have and more with the Sabotage, Overload, Damping (given pistol's the most powerful weapon type). The only good ability soldier has over infiltrator is adrenaline rush and soldier doesn't have the other abilities to make that worthwhile.
Vanguard beats all in ME3. You can outright cheese most fights with it.
Soldier is middling in ME3. It has uses but other features of other classes, through the game revisions, typically outshine.
Yes Immunity in ME1 is OP. The most OP. It gets you through everything, not almost everything. Other classes can be useful, sure (Sentinel the worst?).
