Talking about the 'UNC' (Uncharted Worlds) ones where you travel. IMO you should do everything in the primary planets (Feros, Novaria, Virmire, Therum) anyway.
There's a lot of sidemissions that don't change anything but even just a slight bit in the War Asset section in ME3.
When you're on Noveria, get the Turian to testify for the female secretary- again she'll appear in ME2
Other than those the only one's that i can remember that get a mention or a appearance in ME2/3 are, Garrus and Wrex give you a mission on the Normandy,- Wrex needs to survive ME1 for it to get a mention, and complete Bring down the Sky dlc but let the Bartarian go during the mission
