This is how the game is laid out, without actually describing any major story spoilers.
1. Eden Prime
2. Citadel (can do sidequests)
3. Therum or Feros or Novaria (can do sidequests and find more at Citadel and do DLC)
4. Therum or Feros or Novaria (can do sidequests and do DLC)
5. Therum or Feros or Novaria or Virmire (can do sidequests or do DLC)
6. Therum or Feros or Novaria or Virmire (can do sidequests or DLC - THIS IS THE SOFT POINT OF NO RETURN SO DO EVERYTHING BEFORE THIS)
7. Citadel (a couple small exclusive sidequests can be done at this point)
8. Spoiler (can do some sidequests or DLC - THIS IS THE HARD POINT OF NO RETURN, YOU CANNOT GO BACK TO THE CITADEL NOW)
9. Heads right into the ending area which is another Spoiler
Romance scene is around 7-8, I believe. So basically once you're done the bulk of the game.
Ashley's romance can carry to ME2 or be denied. It can be carried on (but not started from scratch) from ME2 to ME3 (or started from scratch). So she can be made into a trilogy wide romance plot - she just will not have much to do with ME2 in the meantime.
I would but I think I'd get lazy 1/2 way through.
There's already great stuff out there too. Like look up the ME2 Suicide Mission guide sometime. Very comprehensive info.
