-what you ate in cell stage will determine what you become in creature stage NOT what type of mouth you posess.
(so if you mostly ate plants you will be a herbivore, if you mosty ate meat you will be a carnivore and if you ate a combination of both you will be a omnivore)
But there is more to it : it is a graph (as you must have seen after completing cell stage)
every growspurt (5 times eating) you get a nudge to the top (carnivore) or below (herbivore)
but how large are these nudges and where do you start on this table?
A full feating of 5x can move you about 1/3d in any direction.
you start as a carnivore about in the center of the carnivore group, and as a herbivore in the center herbivore group
-in order to become a omnivore, you willl need to counter this effect, and eat slighly off-center.
so as a carnivore eat a bit more plant than meat to become a omnivore, and as a herbivore eat a bit more meat than plant to become omnivore.
it might be a good idea if you want to become omnivore to first to a pure counterfdeed
as a herbivore
5 meat (first growrth)
3 meat 2 plant (second and fourth growth)
2 meat 3 plant (third and firth growrth)
as a carnivore
5 plant (first growth)
3 plant 2 meat (second and fourth growth)
2 plant 3 meat (third and firth growrth)
both these paths will make you an omnivore even if you never unlocked the probuscis part.

If you want to become a omnivore directly from creature stage, you should select that option when playing creature stage.
it is possible to have a "wrong mouth type" so a designed creature may be a carnivore type yet still have only a herbivore mouth.
Likewise giving a creature a filtther mounth, pincer mouth or probiscus mouth has NOTHING to do with what kind of "...vore" a creature is.
(you may be a herbivore in creature mode with only a pincer mounth and pretty much screwed over as you cannot eat fruit with that mouth, yet will puke if you try eat meat.
Luckely you can breed and place a different mouth to solve that problem.
