Depends what you want to do, and how you want to play. Every skill has the potential to be good, or bad, depending what you're doing.

Stealth system is utter trash and not worth engaging with, I'd avoid wasting siill points there.

I've found the first rank to be useful just for the meter, although not a priority.

Most are pretty meh to be honest but all have some degree of use, it's mainly flavor. I mean at level 100 you will have pretty much everything anyway. Things that seem more useful are combat skills, ship skills and research skills. They will make any combat encounter easier. You can't avoid all combat but you can avoid most of it or just run away from it. If you want to try avoiding combat then sneaking and persuasion skills. Like I said its mostly just how you want to play. Some of the less useful skills gastronomy, commerce, geology, astrodynamics, botany, chemistry, outpost engineering and planetary habitation. The game is flooded with chems and food items are just not that good. You can buy all the materials you need from shops and shops have a limited supply of credits so taking commerce just means you end up with a hold full of stuff you have to pass time to sell.

Yeah, I went through a 50 stack of food and it healed less than half of HP, even if skills increased healing by 5 times it would still be crap.

Bethesda massively boosted food in Starfield compared to their other games with a good number of them having various boosts

But in general they're all very low for the amount of work you put into cooking and pale in comparison to general medical items

The only food items I've found useful are ones with an XP boost and Red Mile Rush for movement speed boost

Yep, get 1 point in it for the gauge, but after that it really just alters the gauge appearance without actually improving your sneaking.

I found the food related stuff useless. If the game had a survival mode probably this would be the first stuff I'd level and research, but since there's not, cause Bethesda is like that, yeah, food. It's crap, even before you eat it.
