For beds look for ones with all-in-one or quarters in the description.
However I have seen ships that have modules with plenty of beds. I suppose they were 2 x 2's.

Theoretically the All-in-one hab from Hopetech should be identical to the Taiyo one but I have never used it myself.
you can also find more parts when you go to other cities and visit the shipyard npc or find the brand ship shop selling branded parts...
in other words there's no one single ship builder parts bin that shows you all of you avaliable ship parts. you have to litrally run around clicking on npcs.
crew quarters and captain's quarters and also one of the brands weapon rooms has a bed in it.. but it's blocked by a door that you need to interact with a computer screen to open lol
One of the places that will have the most ship parts available will be an outpost with a landing pad. There are still some parts you will have to unlock doing certain quests or aligning with the different factions.
Just to note, that bunk bed functions as 1 bed exactly like their bunk beds functioned in FO4.
As far as the npc's using them. But for role playing, they function as two beds. And in Starfield, companions and crew members on your ship do not suffer from a lack of sleep in regards to a happiness level like in Fallout 4.
Some npc's, like crew members and companions, will use beds on your ship and Outposts. They lie down and appear to be sleeping.
Yes it always bothered me to not be able to find a bed with no one in it. You can still use them but from a roleplay perspective always prefer to use an empty one. I did forget to put a hab with a bed on the Va'aruun ship I stole for my all science build. So I have to put down an outpost beacon just so I can sleep while on planets, or I use the cots/beds I find in the points of interests,
Big Hint on ship building. One... Take Notes; lots of them. The Modules look different on the inside, so you may wish to SAVE... build (Don't get too fancy)... then go see what you have. Also, keep in mind that when Doors and Ladders (and Windows, if you choose) are created, it will change (Or more specifically, Cut Out) pieces of the Module. i.e., my favorite Captain's Quarters has a Couch in the front section; but if I place it in the wrong place, I'll lose the Couch.
Also...as an FYI - Nova 2x1 Whatever... looks different than Deimos 2x1 Whatever. So... again... lot's of Notes; if you travel around ShipYard to ShipYard, checking out different Manufacturer's Habs, they often differ on the inside. And not only looks, but content; one 2x1 Berthing has a Large Storage Chest, another does not; one Living Area has a Galley, another does not, and so forth; Very important to get a Berthing Area with a Shower; Andreja's My Girl... but a couple of weeks tracing the stars... she can get a little Ripe :D. LoL
Last thing is: If you Mix and Match Habs (a Taiyo Berthing, and a Nova Computer, and etc.) the Outside Paint Job will not look as Conformed as it would if you used all of the same Manufacturers. This, of course, is just personal Preference. I would prefer my outside paint job to look more conformed, and smooth; but I Insist that my Inside makes Sense in it's design, as well as Look Good :).
Oh... and Last Thought: Just in case you haven't noticed; when you're building you can switch out parts to your Heart's content, you are refunded all monies spent on parts. But once you pay for everything, you'll only get back a Fraction (small Fraction) of you what you paid for something. i.e., Paid 20k for a Grav Drive... sold it back for around 800. So don't leave unless you're happy... or, plan to Restore, and go again.

Magenta color ones I didn't personally confirm bed count on
Nova Galactic Science Lab and Workshop give you all the crafting stations AND 4 passenger slots which is something no other module can do
