Just how much Thermal protection does it take to be immune to Cold?
Not even "Frozen" or "Deep Freeze"; just merely "Cold". But even with _410_ points of Thermal clothing items on, I still get Hypothermia! [I'm assuming that Thermal is supposed to protect against both Hot or Cold extremes. Because I can't imagine that Corrosive, Airborne, or Radiation applies to hot or cold.]

I believe all the environmental protection effects max at 80 unless you're using mods to get above that.

As for how much? I'm still not happy with how the game communicates it. I feel like it might be taking multiple factors together to work out how quickly environmental protection degrades, eg: maybe low temp (even extreme) + no atmosphere = low degradation, while low temp + high O2 atmosphere = rapid degradation?

Open your inventory, hover nose over your character, you will see prompt (press B to open character details), you will see that every resistance is capped at 85%.
85% won't make you immune, however it will allow you to explore planet for about 10 minutes without recharging your suit protection.
If there is a storm weather despite of protection it will be depleted in less than 2 minutes.
Landed on planet and see storm outside? Exit you ship and fast travel back immediately. It will change weather.

Exploring the planet and 10 minutes is not enough for you?
Solution - Fast travel. It don't take time in Starfield. Fond some POi? Fast travel to your ship, regen protection and fast travel back to POi. Continue exploring with full protection.

The "Space suits" in this game aren't space suits. Just some kind of "armour".

Makes me think of a paddle ball toy: The wooden paddle with a rubber ball attached by a rubber band. Boinga-boinga-boing. Back and forth, back and forth. Silly methodology for the 24th century. You would think that they would have developed a suit impervious to weather conditions and temperature extremes by then. Especially since they were a space faring society for over two centuries.

Actually I described a worst case scenario. Most cavew, outposts, ships, and deep underground POi also grant you a protection regen.
And even of you ignore protection depleting you can travel about 10 minutes more untill you die (orange permanent damage increase).
As for me it is very rarely I use fast travel at all, after release of ground vehicle Rev-8
Also if you find something interesting you can actually build an outpost and construct a hub for additional environmental protection.
P.S. Planning on +75% difficulty.

To add to this, I think the stacking cap of the equipment and/or the damage taken/recovery from environmentals can be improved on by skills Physical > Environmental Protection and Physical > Decontamination. So stick some points in those if you can.
