How were you "forced".

There are also the Mission Board quests and there are several mission boards.
Edit:
here you go:
Starfield - Quests
https://starfieldportal.com/article/starfield-quests
Don't buy it. You'd have to play on very easy, skip every bit of dialog possible, skip any exploration, and loot virtually nothing.
Not that it isn't possible but it would be a very odd way of playing. You'd have to plow through quests as quickly as possible for the whole time.
How many companion quests have you done?
You mean the mining sequence? Where you obtain the first artifact?
I don't know how you label these as "forced" - I mean they establish the very story of the game.
But -- you see what you see, for sure
It's telling that it's the only companion you've found. There are multiple in each city, many are tied to quests you wont find without exploring and some are simply for hire in bars.
No 4. They will appear automatically in your log - 1 is hidden
