Otherwise, try doing a file validation as you might have had corrupted files during the update... It happens sometimes with Steam...
I also have crashing now that I didn't have before this new update.
What I have tried :
Try to exit the game or simply restart the PC. Then, I launch the game (via Steam) and wait at the intro of the game for the "shaders" loading. It's ok after that, no problem ... .
I'm playing on the exact same character and save I started with on August 31st, 2023 and I've taken every beta patch along the way. No new game required and I have over 1,000 hours of play time.
Vortex is a manager, SFSE is Starfield's script extender which is needed for many mods... You might be thinking of Mod Organiser...
I personally use Vortex... Though I keep hearing Mod Organiser is better, Vortex has done everything I need it to so far...
