anyway, I am with you... Ive done a few cosmetic pretty ships but now, because NG+ and because limitations, I am just slapping the parts I need on anywhere around my habs.
I am proud of my firefly attempt:

but its impractical; has ladders to get around and can't be upgraded enough for high level play (made it around level 40) without serious compromises to look or parts.
now I just fly stuff like this, which has maybe a 2/10 attempt to look nice, 10 min or less. And the next one after that may very well just be anything anywhere, as I have tired of the builder.

note: To unlock this engine you need to complete the mission All That Money Can Buy in Neon given by Walter Stroud and be diplomatic during its completion.
They don't look the best and aren't easy to connect, but I like having a 4000+ mass ship with 100 mobility.

Perks make a huge difference on cargo capacity. 6k without it, over 10k with level 4.

I think of it more as this....
You first keep the builds simple, kinda building on other ship designs.
Then you get all these bright idea of I want this, this, this, and that.
Then you fly it around for a while and realize I did not need this and this.
Over time as you go on you begin to realize you were overdoing it.
So then you cut back and your design start looking more towards the earlier simple designs.
Best example, that Crimson Reaver, I WAY overdid the firepower. I was able to obliterate level 72 ships in a matter of a few seconds when they got in my front sights.
That was when I realized you aint got to max 12 power for each weapon category, you aint ever going to be able to use all three categories at full power think about it, that would take 36 power, leaving you 10 points for shields and engines. So you either aint going to have full shields, or the enemy is going to constantly outmaneuver you.
The only guns worth maxing is turrets because you need to face them different directions. As seen in my Armadillo build. I am kinda unsure on the missile launcher as I may not even be able to get targets into sight to lock on them.
The same concept applies to grav drivers, you do not need the biggest mass grav drive, you need the grav drive that will get you 28 light years range. Anything higher is excess mass.
Engines can be the same way, 100 mobility is 100 mobility, whether you do it with 2 or 4 engines. You just need the thrust and such to keep the maneuverability to 100, not add more mass that drags it down.
Sometimes depending on your (overall mass - engines) it may be better to use other engines. However for large insane freighters they are the best.
I forgot who it was, but someone told me they had a design with so much mass that it would ONLY use those engines because it was the only way to get rid of the "not enough engines"
