Aside from the fact that, if given the choice, I will always choose to play a female character, because if I have to see a butt in front of me while I play, it darned well better be a female one, they always seem to have the best fashion options.
I also have no need/desire/want for some fake "dating" life. I've done all the dating I ever care to do, been married for 22 years and still going. I've told my wife, "After you, I am done with the human race. I'll keep cats and tarantulas instead, they're less trouble."
Because the problem with chasing skirts is, sooner or later, you wind up catching one.
I didn't come into Starfield because I was looking for some fake job - I have 4 real ones. I didn't come looking for fake friends - I'm still trying to get rid of my actual ones. I sure didn't come to strike up some fake romance either.
I also do not WANT any companions, I don't care what buffs they give me, they're not worth the trouble.
Like many, my only reason for having Andreja as a companion was because of her skills and pack mule utility.
Sarah flirts enough that there is no way that character's motor isn't running hot. Having said that, she also gives off a head mistress, correctional vibe with all her angry retorts she blasts out if your response isn't up to her standards.

I have no interest in marriage, and in Fallout 4, Deacon was the only companion I spent more time with after getting the perk, but then Deacon doesn't do romance, and has some epic dialog in battle.
I have posted it a few times here, they needed a Summer Smith level of enthusiasm character. Someone there saying Booyah! instead a school marm telling you to quit carrying so much stuff!
Still, If I have to, and I did just that with an alt to see the play through, I'd marry Sarah, because she's flirty and upbeat when she isn't nagging.
Ironically, now that I don't grab everything and have ranked up a bit of Weight lifting, no one nags much at all anymore.
...I really wish we could simply space our companions out the airlock.

100%. Id post a spoiler about how i handled this but you can end up romancing both if things work in your favor and never have something disliked again.
