Empyrion, definitely. Especially if you like building ships or outposts.

Side note: I found it hugely helpful to download blueprints from guys who really knew what they were doing and then pick the ships apart... you can learn a lot from breaking down a well-made ship.
In Starfield you play as a captain piloting a ship.
In Avorion you play as a ship who carries around an expendable crew :P
Still there's lots of stuff to do in Avorion, like mining, trading, building factories and space stations, STEALING factories and space stations by boarding them, doing quests for the various space-nations, etc, etc.
Even though its an dated game, the game demands an very VERY HIGH END PC from what ive seen !
