I do agree it would be cool to be able to assign them to other ships that you own and have actual "wingmen" flying with you.
Just talk to them, select the dialogue option indicating that you want to trade, and then give them what you want them to use through the trade menu.
Once they have it, view it in their inventory (still in the trade menu) and tell them what to equip. The hotkey for telling to equip things is shown in the lower right. For me it is "F" but I may have rebound it.
Note that it will show YOUR character on the equip screen, but they will be the ones that actually equip it if you are in their inventory. Also note that for weapons, you do need to provide them with the proper ammo. They don't actually use the ammo, but they need it in their inventory or they won't use the gun.
They also benefit from whatever is on the space suit. So if they are wearing armor or clothing with certain perks they benefit from them.
It's not like there is any generic "crew" that doesn't have a name. There are some crew that are just crew though, which cannot be used as following companions. Lin is an example of that. She is still given equipment the same way as any other follower.
I have edited all my crews weapons and apparel. I put Barret in the Syndicate Capo Suit just to show you it could be done. He also has an upgraded, fully-auto weapon. Don't remember which one, but he has been customized:

As it is, there's way more named crew than I need.
You can probably still give them equiopment and have them use it though. Just you'd have to use the console command "Openactorcontainer 1" to get to that interface, if they don't have the dialogue option.
