As for the last - that is something that will have to wait for the release of the Creation Kit and xEdit, to be modded in. As of now, it is just the design choice that Bethesda went with, and not much can be done about it.
There are a lot of things that would have been nice to have in the game, but which, unfortunately, will just have to wait until the tools are available to add them in as mods.
Go to Charon. Pluto is blocking 95% of the sun, but no shadow. Land on the side facing Pluto and look up.
It's like they let procedural generation 100% deal with it. There's just the star and nothing else.

Interesting. What video card are you using? What about you OP? I'm using AMD and can't see it.
Up until last patch I couldn't see star lens flares.
Weird. I just triple checked, no Pluto. Also, I'm pretty sure if the sun was real it would appear much smaller from that distance.
I'm using an RTX3080 10GB.
Maybe they're already slowly working on it, who knows.
