Bethesda games are sandbox games and people get a lot more content out of these games by making new characters. NG+ is really an extension of that. You do upgrade the Starborn ship and armour (plus optional power upgrades) but this isn't necessary to enjoy the game.

You can be like the average Skyrim player and not even finish the main story since you're too busy doing other stuff.
It's a Bethesda game, the main story has never been the selling point in any of them, from Morrowind, Oblivion, Skyrim, Fallout 3 or 4.
Just go do whatever you want. Find a planet with a lot of resources and looks great, build a settlement for a hunting safari and decorate however you want, or become a mining tycoon, build multiple mining outposts with a big cargo ship and sell cargo throughout the settled systems, or be a space pirate and hunt down other ships and steal all the wooden ducks and sandwiches.
Bethesda games aren't there for the narrative being told by developers, they're there for us to play however we want to.
that is a very elegant way of saying none but the leveled bonuses you get when you reset.

I was quite pleased by that, seeing as that's one of the reasons I choose to NOT skip the main story on my second run through. (I also did it to get a few missing achievements, and to see what changes there were).

Yeah the bed was the big one for me, since my whole MO in the game was to take a little siesta and sip a nice tea before every mission in the game
