Try this:
Go back to the map where you acquired your pet rock in the first place, then ForceReset with your ship and all the floating rocks present, including your pet one.
If this ain't working either, you can search for the Prima Games guide article "how to remove rocks stuck to your ship in Starfield". That teaches the click and delete method.
Huh, maybe restarting is enough?
Then I went to a shipyard, changed my homeship to another ship, left the shipyard menu completely. Then changed my homeship back to the ship I was originally using, and renamed the ship. I then hopped through the galaxy a bit and called it a night (the rock was still following me the whole time). Next day I logged in my pet rock was gone, so yeah, just mentioning what I did here as a potential fix for some people.
You are welcome.
Console title means 2 weeks per patch. One week to code, one week for MS to verify it for Xbox live network.
Seems to be fairly typical Creation Engine oddities.
