Event Viewer > Windows Logs > System & Application should tell you where the crash is coming from but I'm 99.9% certain it's a GPU crash.
If it's a hardware issue, then the OS usually triggers a full restart as a self-preservation. It is rare to see a ctd purely on a hardware defect.
There's a tool for this: Event Viewer. Please consult that too.
I have tried every possible solution online, nothing works.
It mostly happends in the big city's (actually only there), other then that.. everything runs fine.
I did notice turning down "crowd" to low makes it appear less frequent (or it was just luck).
Considering so many people have this, im hoping for a patch or driver update soon.
Because so far most people have been able to play Starfield without crashing including myself, that tells me that Starfield is unlikely a direct cause of repeat crashes, it could of course be a driver issue but that's more difficult to rule out whilst hardware is easily tested, there have also been issues for both AMD and nvidia users which makes driver issues less likely a cause.
GPU freezes do not trigger a reboot, the system detects GPU inactivity and restarts the display driver, given the descriptions this is what is happening.

65 deg Celcius seems pretty low for a stress test.
What is the timestamp of that RadeonSoftware.exe fault?
I mean it could have crashed because of the moon phase 2 months ago.
Or that ucrtbase.dll is part of the driver, thus it may have been the driver that crashed.
But drivers usually don't end in .exe, so I have no idea.
Your crashes are sure special (I read what you wrote up till now).
I'd try to lower/turn off GFX options until the crashes go away.
(Disable Discord (overlay) even if it crashed without it, just to eliminate one more possible source of bugs)
And contact the devs (official forum, bug section or whatever) with all you data, as it may as well be a bug in the game itself.
