it's what I've been doing to get my Steam overlay with SFSE in all of the BGS rpg's going back at least as far back as Fallout 3, if not further.
I can use Mod Orgamizer, SFSE and the Steam overlay all together. It takes like 10 minutes to set up.
Wrong, you still get achievements using the method that I mentioned. Your playtime is also recorded.
You are not playing Starfield as a "non-steam game". The SFSE loader is the non-steam game. You launch that through Steam. It launches Starfield, which is also running while Steam is running. That's all it takes for playtime and achievements to be recorded.
It still makes a lot more sense to launch SFSE directly from the Steam StarField "play" button ^^
It's a simple solution that involves less changes and launch a single process through Steam, when yours launches two.
Do whatever you want, but don't present your solution as the best and only one worth ;)

Install SFSE normally and go get the beta build for MO2 from the MO2 discord here https://discord.com/invite/6GKR9jZ . Or you can download this plugin for MO2 here https://www.nexusmods.com/starfield/mods/681 . This MO2 build will automatically detect SFSE.
In MO2 go to modify executables, select SFSE, make sure "Force load libraries" is selected, then click on "Configure Libraries" to the right.
Select "Add Row", check the box next to "Process Name", then hit the "..." button to its right and select the "sfse_loader.exe" as the process. Then hit the "..." button on the right of "Library to Load" and navigate to your steam root folder and select the "GameOverlayRenderer64.dll" then hit ok.
The guide will be more descript with pictures. Even though it is for Morrowind, this still worked for me by selecting "sfse_loader.exe" instead and then selecting "GameOverlayRenderer64.dll" instead of the non 64 version.
Now I am only using reshade and the Baka Achievement Enabler. I am not using any dlss mods at the moment so I don't know if that will conflict at all for you.
Anyways, I hope this helps because I really wanted the steam overlay for achievement tracking and I finally found an answer that worked for me.
For people searching on Google later.
Make sure it's the Overlay64.dll like said here, and not on the morrowind/oblivion guides where they just use the regular, that was my issue.
