Can't Untrack materials... Reeeeeeeeeeee

I've gone through every items on each bench and research station and it says nothing is tracked, but its still showing wire/aluminium as tracking.

Because you tracked it on a research that you already finished. Hopefully they will add a menu to track & untrack resources manually soon.
