Then building ships from scratch really benefits you mid-late game due to all the added skills and new markets you find to truly make your ship yours
I went option 3. Modified my start ship. Took it apart to figure out the ship builder, swapped out some components, replaced with new components, put back together.
I'm useless at building stuff like this, but this really helped me.

The build ship interface takes a few couple hours to get used too, but it's actually pretty easy to use once you get used the the UI

I added two large cargo containers onto the back of the ship, with a bit of work, and an upgrade to the reactor for good measure.
Since then, I've now added a weapons workbench, spacesuit workbench, pharmaceutical workbench, and an armoury to the ship, added additional engines to help with the weight, and pimped the reactor further. All for less than a new ship.
I'm not going to pretend it's pretty, but doing it on a budget - yeah, it worked well, imho.
Nope, just using the ship trader to add in the parts I need. A lot cheaper than new ships - just the cost of two cargo containers, and no need for additional perks. Was able to do it with no specialist perks.
i did the same thing now my start ship is a beast, it gave me a better under standing on building and only cost 30k to build
Ship class is simply a matter of reactor class. Modules must be the same or worse than the reactor class. So class B reactor allows Class A and B modules. Be aware that piloting skill is necessary if you use higher class reactors.
