How do I display melee weapons?

You cannot. Literally.
Not at the moment.
Wait for a patch (hah, as if they would bother adding something like this themselves), but more likely - a mod.

While there is no propper way to display these you could ofcourse just add a table then drop the weaps and go back into build mode. You then are able to pick up the dropped weaponry and put it exactly there where you want it on the table.

Items with a creds return on them can not be picked and manipulated up unless in build mode.
