I haven't started collecting anything so far. I mean apart from crafting materials that I haven't really used yet. And credits. In fact I just stopped wasting credits on ammo and instead invested 62k in upgrading the starter ship so I have more cargo space and can work as a space trucker. Which also means I might now have space to collect things. And I finally got workbenches to rid myself of those pesky crating materials.

After that I dunno... maybe various character outfits from across the galaxy? I sorta already started doing that but I only got like 7 or 8 outfits that I liked enough to keep them. Stole swimwear from Paradiso too for science.

What do you mean? You can move it around just like in fallout 4, just drop it then hold the pickup button for a lil bit, feels like around 2 seconds fr me.
