I'd 2nd overheating, or power supply about to fail.

Clean out the case and all the fans. Maybe get some water cooling if the board has connectors for it.
Almost certainly your CPU is overheating. It's astoundingly unoptimized and hits the CPU the hardest. It briefly got a couple of my cores to 100C but it wasn't long/hot enough to cause a shut down.

Either thermals for devices were too hot. Or you don’t have enough power to your devices. E.g, running a 4090 on a 650 power supply and maxing the graphics will cause the pc to shut down.
my pc specs are:
AMD Ryzen 9 5900X 12-Core Processor 3.70 GHz
32.0 GB RAM 5200mbs/read
RTX 3080ti
240hz monitor

my specs exceed the game and geforce has optimised it for me and everything is ultra and my temps were fine i was looking at them at the time and nothing went above 70*C. have no idea what it is and like i said i played for an hour then it started happening and its only this game
Game sucks so bad your PC doesn't like it.

what's the wattage of your power supply?
Apart from thermals, it can also be overcurrent protection. Starfield stresses the GPU and CPU a lot, so with an underspecced PSU, you can easily overstrain the rails and have it shut off. Check your power draw.
If it totally powers off.Its either a heating issue with your CPU or a PSU not supplying enough voltage or to much. That is the BIOS protection circuitry. Those are the only 2 things it monitors I am pretty sure.

Corsair RM750 V2 750W Gold Rated Modular
my cooler also Corsair H150i Elite Capellix 360mm White Liquid Cooler
could be your motherboard dying, i had similar symptoms (not overheating, but my PC would just crash while playing Overwatch back in 2016) until one day it crashed and my PC wouldn't turn back on, i switched parts with another PC to troubleshoot to find out the motherboard was fried. replaced it and uses all the other components in a new build for a while without issues.

i think you might be right with the power supply but i have no idea how to fix it
i have this motherboard:
Gigabyte B550 Vision D-P Motherboard
its treated me well up untill this game lol i can run dead island and ARK on it max and its fine and even horizon zero so i got no idea
I play from laptop and i needed downgrade the power and voltage a little bit because its freezing dropping frequency for preventing damage. But still playing on 93C waiting for winter so i can open the window xD
