turned off all AMD Adrenalin settings and the game seems to have stopped crashing

I wasn't able to get past the first 5 minutes of the game, I forgot I had some Adrenalin settings on, so I turned them all off and the game seems stable at the moment.

There was one setting that was hidden in the advanced section that might have been the cause:

Surface Format Optimization

I wonder if it was that setting that caused the crashing for me.

I also turned off Anti-Lag too, maybe that was the issue.
