Copy the files manually. because I didn't understand
I didn't copy the files either. I changed the name and restarted the PC.
You can now save.
The thing I found to work for me was disabling the "Controlled Folder access" in windows security. This feature has created other problems for me with different games and programs.

My game saves just fine. This is just an unfortunate bug
This screwed up my PC for some reason, all desktop apps and games disappeared but still in the program files.
You should really check your setup - the game isn't doing such a thing.
If you have any cloud services (Steam!) active, disable them.
Seriously people, when you have trouble with savegames check what your OS is doing / check your storage left / disable any and all third party apps for said game which might interfere with files (anti-virus scanners / microsoft defender / cloud services like Steam cloud & OneDrive).
