If I purchase the digital premium edition does that mean I get to play it on the 1st September since it mentions 5 days early access???

If you bought any of the deluxe editions and got early access, you'll be able to start playing the game on either Thursday, August 31 or Friday, September 1 depending on your time zone.

They didn't move it, it releases on September 1st at midnight UTC worldwide at the same time on all platforms. So just depends what time zone you are in. If you are in Europe/Asia you get it on the 1st. America gets it on the 31st. But nobody can play earlier than anyone else, release at the same time.
