If you are a beginner, I suggest you play as the hunter so that food isn't an issue at the start of the game. With food worries out of the way. you can focus on securing a good water source by working on the things mentioned above. The key to any start no matter the character is securing a fresh water supply. Food is important, but you can fast a bit as long as you don't starve too often and keep tabs on your weight.
Water puddle regenerates roughly once per day and holds 2 shells of water. just don't forget to keep yourself cool all the time by washing in the ocean to keep water consumption low. always carry/have nearby a shell or two of salt water to wash if away from the ocean. keeping yourself cool all the time makes a huge difference.
Some foods also give a bit of water, like cooked conches and lemongrass.
rain is rng, so you just low rolled and got unlucky.

As for rain, there is a guaranteed rain on day 2 and a good chance of light rain until day 10 where you are reliant on RNG for rain. Day 30 is the wet season however and and you get lots of rain, but storms now become an issue. the dry season comes at day 60 and rain is very rare. It all repeats every 90 days with the normal season.
- If you harvest a banana tree three times, you can chop it down. The stump will slowly drip water for about a week. You have to put a container in the stump though (a coconut shell will do). Since the drip is so slow, it is best to do this in advance if you think you'll soon be in trouble.
- "Stool looseness" increases as you consume coconut water and coconut meat. This can make you thirsty insanely quickly. The more coconut water you drink, the more loose your stool, and the harder it will be to recover naturally. EAT CHARCOAL to instantly reduce your stool looseness. You can harvest one piece of charcoal for every 4 - 6 hours a campfire burns.
- Water evaporates relatively quickly in coconut shells. If you have many water-filled coconut shells, click-drag them on to each other to transfer water. Since every shell evaporates at its own rate, having LESS filled shells total will slow evaporation. For example, say I have 20 coconut shells at 50% full. I click drag them on to each other until I have 10 shells at 100%. Thus, it will evaporate twice as slow.
- Boiling unsafe water makes safe water. Boiling ocean water only makes salt.
- A filled clay vase evaporates 4 times as slow as a coconut shell and can hold a lot.
- Both the clay cooking pot and the small jar are immune to evaporation.
