Which resources are finite?
The wiki says:

"Several resources in the game are finite"

Which ones are these?

Considering each creature (except fish) has a tracked population number, I'm pretty sure they can be hunted to extinction.

water bottle, jerrycan, copper ore, scrap metal, plastic sheet and some others.

Copper ore is not finite, you can find more in geodes...

Pretty sure the amount of copper you can roll from geodes are still finite

Even if that was the case, you can find copper by exploring the Volcano and Acid Lake.

Fairly certain that count is also finite.

I have no way of checking the data so I can't say, however continously exploring the volcano also gies geodes, not to mention there is a metric ton of those in the eastern highlands cave network as well, so you should have more than enough for all copper tools and then some.

Assume everything is finite, but you probably won't run into the hard-limit as long as you don't harvest or hunt more than you need to survive. Scrap metal is probably the most finite resource that gets used up. Copper is fairly finite, but there's more than enough to make every tool you need. There's a perk you can take that spawns hunter-killer drones which attack you on sight. Fighting them is highly dangerous, but can get you extra scrap metal.

What about plants like Kava or Spider Lily? Can you harvest and accidentally wipe them out from a location? Or are they "infinite" but take progressively longer to find new ones?

For example, it has taken longer and longer to find more Spider Lily in the Wetlands to the point where I've chosen to just plant new ones.

Each area has a population, and you can wipe it out (if you try hard enough) it will return if nearby locations have high populations. You can wipe out across the island if you are really careless or unlucky but they are infinite because they are renewable. It is much much easier to grow your own if you are low than it is to wait for it the replenish naturally.

The most "irreplaceable" items are Weston & the jerrycan, +/- plastic sheets, scrap metal, and other unique items from the various starts.... If you lose Weston to a storm or you murder him he is gone and you can only have one Weston... and the only 2 normal jerrycans in the game are from the plane crash start and in the shipwreck I don't think they can be stolen by the monkeys not sure about storms though... and plastic can be either scarce or abundant depending on the perks you take. The new supply trunk gives 2 plastic sheets plus the lift raft start gives a few more from the deflated raft (or from the parachutes etc.) and the tent from the survivor start can be cut up for more as needed... same goes for scrap metal which as noted can be infinite via drones but it can also just be much less scarce via the plane crash start from the seats...

He isn't immune to theft, though, an ape stole mine.

He isn't, but you can reclaim Weston from the Maqaque den, provided you have the skill needed to fight your way in.
