Both answers before mine are the key. There's really no point in displaying the ENTIRE cards constantly. Persuasion is calculated for you in the top right of the screen, and swords are easy enough to figure out, and chances are you'll know what your cards are with just the top of them after you've seen them a few times.
Sure they can add an option for it, but I fully agree with their decision not to make it the default. Just look at Tabletop Simulator, you don't see your cards in their entirety constantly. You won't be looking at them constantly either, it will just obstruct the view.
Why even compare real board game to a digital game? Digital has its advantages. Or maybe let's make players shuffle the deck manually in the digital game, because it's no worse than a real game?

And in Dune there is plenty of space on the sides, and if you move the conflict panel a bit higher there will be space to show the cards in full:

This will become a bigger and bigger deal with the expansions and their more complicated cards.
It would also be good if the imperium row summary showed what the cards did, instead of showing the irrelevant card art.
Regarding the Art being "irrelevant" I highly disagree with that cause that's how memory retrieval works > after you've played a few games you know what "bottom part" effects a card has because your brain has linked that effect to the art that appears on that card.
Another thing is that we've mouse hover which happens with like 0.2s delay so I mean... is not that you're not moving your pointer around the screen, no?
Lastly, there are other games who used the cropped version for cards, like Wingspan for example.
I would look at Aeon's End as a good example of how to show cards. They cut off a bit of the art in favor of showing you what you need. And even the market cards have symbols showing a shorthand description of how the card can be used. You can review the entire board state without moving the mouse around reading one card at a time.
Also, someone asked whether, when playing the physical game, you keep your cards on the table and occasionally look at them. I think most players, once they have used a card holder, either one that sits on the table or a handheld one that fans the cards, would pretty much all agree it helps with situational awareness and their enjoyment of the game. In all seriousness, if you haven't tried it, you should.

As long as it's an option, I don't care. But I like the cleaner feel of not seeing the entire card.
That said, it doesnt take many games before you start to know the icons of most cards.
