Can any hand held controllers be used when you are using the Dock on your TV? If so, which one? Thank you! : )

They can, all of them. This umbrella answer is very much intentional, Valve do support pretty much every gamepad under the sun there is. My personal favorite is a recent XBox one. If your hands are on the smaller side (my GF's hands are and she can't handle those hunkers), a PS gamepad or an 8BitDo one would be an easy recommendation. The Switch line of gamepads works on the Deck as well (my GF likes JoyCons), as does, well, every generic gamepad. Go to a local entertainment electronics store, buy a gamepad, it'll work. Then there's the Steam Controller, I'm using mine only for puzzles & hidden objects, I've read from people using it for competative online FPS' though.

That's talking about gamepads. When extending the discussion to all kinds of game controllers, not all of them just-so-work. High-end steering wheels tend to come with own software which is required to properly use them which likely won't run on SteamOS.

But if it's just about gamepads, get ANY. Well, the usual caveat applies: don't go for the cheapest piece of Chinese crap you can find, buy something worth it's price, even if it's more expensive.
