Dock also updated to version 0.13.15.124
So far very positive experience. VRR for example is just toggle ON/OFF in game settings.
Tested with LG C3 evo television and cheap Samsung monitor. HDMI cable.
Also too many issues with 3.6 so I reverted it back to stable channel.
How stable is it now that you switched back to stable?
While I agree the doc stability is much better, 3.6 is incredibly buggy right now. Did the doc firmware went back to an older version too?
Personally this is so far the best dock experience and I have been used dock since day one.
I've been hard rebooting my deck so often lately that I'm afraid it'll break soon.

Monitors talk to gpu vendors and implement workarounds. When you are a third party like Linux or Valve, you do not benefit from monitor hardware manufacturers talking to you. Even moreso, Nvidia will make demands about quality too.
You do not think about it, but edid and other stuff are ways major vendors slow down competition.
Edit: you can help by going to your monitor vendor and asking why it doesn't work well the steam deck.
In your case, delete the .cfg file and reset your display settings. I believe it should fix your issue
