The left touchpad in desktop mode literally does nothing else but "left click". Can we have the option to also have it scroll up and down by sliding up or down?

You can totally do that but you gotta customize your controls.

Check out my video on how to do so. In my video I use the circular type of scrolling but you can change the "circular" option to a vertical swipe if you prefer.

I'm left-handed and feel that the Desktop Mode's touchpads are set up for right-handed users only, which is discriminatory surely? Why can't the left touchpad be set up to behave exactly like the right touchpad by default? Yes, I could dig way into the Plasma settings and find out how to change it, but why should I have to just because I'm left-handed?

I felt the same and spent a good hour making my own control scheme the way I liked with the scroll wheel and backspace key etc. You can do pretty much anything you want. There's also already lots of community settings you can download to try out.
