OLED - Using 3.5mm headphones and built-in mic at the same time
In the Microphone section of the Steam Deck Basic Use & Troubleshooting Guide, it states that the OLED model can use the built-in mic simultaneously with 3.5mm headphones.

In desktop mode, I am able to plug in my headphones and switch from headset mic to internal mic, and it does indeed work. However, once I unplug the headphones and plug them back in, it will switch back to headset mic. There does not seem to be a way to disable headset mic entirely nor keep it set to internal mic.

I hope this is something that can be resolved in a future update.

I have the same issue. I connect my IEMs, which have no mic, to the SD through the 3.5mm jack, hoping to use the built in mic for discord or the game's voice chat.

But it just doesn't work; as soon as I connect them, the game/discord don't get any audio from the mic, doesn't matter which input device I choose

I just fixed it on my OLED with below method, you can try it.
English is not my language so there may be some different of options.

1. Go to desktop mode.
2. Open Setting>Audio.
3. Change Playback Device to "Headphones".
Select "Internal Microphone" as port in Record Device, then its name will become to Internal Microphone.

After above, below setting may be help to use Discord or other chat apps.
Change input to "Filter Chain Source" and change output to "Headphones".

Yes, it is. I've add Discord into steam library. Just launch it under gaming mode and it's working good.

Yes, I actually have to do it every time I plug the headphones.

It would be really nice if we could just change it from the Gaming Mode.
