No HDR in Devil May Cry V
The game should auto detect HDR screen and launch in HDR mode, there's no extra toggle in game's options. But that doesn't happen on Steam Deck OLED, HDR does not activate at least on the current stable OS branch.

FWIW, I've been testing some games that are listed as supporting HDR but they don't detect the Deck's OLED screen as HDR capable. I don't think there is anything for you as a user to do at this point in time.

I believe some people have gotten around this by putting
PROTON_ENABLE_AMD_AGS=1 %command%
in the launch options. Also it may be worthwhile to mention this problem on the game's Proton thread[github.com], and it's affecting a lot of other games as well.
