New RouterOS 7.8 fixes the issue and now WPA3 on Steam Deck is working correctly. Anyone who has a similar issue - make sure your router has the latest firmware update.

If you are having issues with WPA3 in game
This is something that our development team is working on adding but is not currently available. In the meantime, if you need to add the network manually you should be able to do so from Desktop mode (Steam button > Power > Switch to Desktop).
If you are also having issues with WPA3 in desktop mode.
Our development is aware of a bug that can prevent some WPA3 networks from connecting in Desktop mode. They are working on a fix that will be included in a future OS update.
