I tried to run "flatpak install -y com.google.Chrome" myself (which is the command Steam client runs), and it gets stuck on the question asking which flathub remote to use (default or beta), which I think is the issue.
EDIT: I confirmed it by removed the beta remote (EDIT: not a good idea!), resetting "deck_desktopapp_intro_seen" to 0 in localconfig.vdf, and restarting Steam in gaming mode.
When prompted to install Chrome, it installed successfully.
EDIT2: Except it seems to install ChromeDev because seemingly stable chrome is missing from default flathub? https://flathub.org/apps/details/com.google.Chrome
So don't remove the flathub-beta, that is not a good idea.
Edit. Checked the web archive of flathub and it doesn't look like either chrome was on there in early march. I guess when chrome dev was added it caused this issue. @xPaw are you assuming it runs that command, or did you find that somewhere?
See https://github.com/flathub/com.google.ChromeDev/commit/f3233ec8ce5ca419dcbfd51c0f010ecbb15eb055
Now that it exists, Steam tries to run `flatpak install` command, and gets stuck on prompt to select which remote to use, and thus never actually installs it.

I can install it via the discovery app in desktop mode as well and add it as a non-steam game. It’s just nice from game mode since it adds all the artwork and backgrounds. Also as more people get their decks they’ll be seeing that prompt

LOL that's kind of hilarious. There are a ton of beta/non-beta packages on flatpak, I'm really surprised they didn't take that into account already.
When you go to non steam games and use the in-built option to install chrome it, it attempts to install chrome after a couple of mins the window closes/freezes, Then all buttons and functions stop working untill the Deck is restarted
