if it's a Linux native app that is distributed through the discover app you can also uninstall it through the discover app in desktop mode.
if it's a classic windows app(.exe) you can install and uninstall it through lutris(available in the discover app)
you hit the [+] button in the top-left corner, select the option for physical media and downloaded installers, and then answer the questions that pop up and then select a downloaded installer to install the app from. (make sure to select the add to steam option if you want to use it from game mode and want full compatibility and controller options)
you can uninstall it by right-clicking(or whatever equivalent you have configured) the app in lutris and selecting the remove option.
i do think you have to run your games through desktop mode to be able to multi-task and get spotify running in the background, game mode gets better performance and compatibility options by behaving like a console OS.
