You may have an easier time with it according to your preferences and how you play. I play a lot of golf, for a go-to game, as the inputs are minimal and very easy to tweak. FPSs are definitely playable depending on your level of understanding of the SD's features to adjust the individual settings and your preferences of. You'll also find games of all genres that play surprisingly well...from an uncoordinated old guy's perspective. As I've said before, It's been the best purchase that I've ever made. One that's lived up to the hype. Go get some!
If you dock the Deck then you can use a mouse and keyboard too, so you can play that way at home and on controller on the go if you really wanted to.

While things have changed quite a lot with Steam Input since the original Steam Controller launch, a lot of what GamerMuscle shows in this video you can do and have been further improved upon.
While Steam Deck isn’t something I’d want to use in competitive for an FPS, it is definitely serviceable if you bother to delve into the customizable controller options.
As for the other game types noted in the OP, they are fantastic on Steam Deck. DeadCells is one of the best experiences on Steam Deck.
Considering the variety of preferrnces and options you have with the steam deck, including gyro and the mousepads, you’re probably right.
Some of the non competitive FPS like fallout 3 plays well enough.
That's the same that I do with Fallout 4. It's a bit too complicated, coordination-wise, for me on the deck so it's the go-to game on my PC and I leave it there. Like you say, like anything else, it just takes some getting used to and practice. The first 3 months using the deck through my hands for a loop!
Minecraft Java also works surprisingly well with this control setup
