The amount that you need. Ok. If you can fit all your stuff in 512 GB, go ahead.

I think 512 is the way to go, 256 a bit low for modern games and if you plan to use it often. I'm fine with reinstalling stuff but not constantly, 512 is the way to go. Ofc you could use SD Cards too but I don't trust those.

1 TB SSDs that fit in the Deck are reasonably priced now and are very comfortably roomy.

I'm considering going all out and getting the Sabrent 2 TB drive once I get my OLED. Probably overkill, but I would rather have too much space than not enough.

would epic games, ubisoft, minecraft, roblox, steam be enough
I would get a 64GB Steam Deck & then buy a 1TB or 2TB SSD to future proof it & if you really want to have even more insurance on it then buy a 1TB micro SD card becuase while some pc games don't take up to much space others can take up a up at least 100GB when you combine the base game plus DLC. If your only emulating games the single 2TB SSD might be enough space as long as you compress the games & depending on how many games you try to put on it.
